ATapenade originated in Provence, is such a versatile condiment and is well worth making your own as it can be kept in the fridge, if covered with a thin layer of oil, indefinitely Simply put in a food processor ten anchovy fillets, 200g black olives, one clove of garlic, one tablespoon of capers, three tablespoons of olive oil and blend until you have a fine puree. The finished tapenade should be thick and smooth.Tapenade is delicious with tuna, meat or grilled fish and is great as a dip with crudits and mixed into pasta or simply as a snack spread on slices of toasted bagette.See the full content of this document
