MACE (JAVENTRI) is the net-like covering of nutmeg that turns yellowish-orange when dried. It has a warm sweetish taste, with a slightly bitter edge. It has a fine taste but even better aroma.
Mace is preferred in lighter dishes for it subtle flavour. It is used whole or ground to impart a delicious flavour to sweet and savoury dishes.
